Ingredients:
- 3 tablespoons lemon juice
- 2 tbsp. l. olive oil
- 1 bunch kale, stems removed, leaves thinly sliced
- 1/4 cup dates
- 1 Honey Crisp apple
- 1/4 cup toasted sliced almonds
- 30 g Pecorino cheese, finely grated
Preparation:
- In a large bowl, combine lemon juice, olive oil, and 1/4 teaspoon salt. Add the kale, toss, and let sit for 10 minutes.
- Meanwhile, thinly slice the dates and cut the apples into matchstick-sized pieces. Add the dates, apple, almonds, and cheese to the kale. Season with salt and pepper and mix well.
