Ingredients:
Kale with milk sauce
- 1400 g kale, stems removed, torn into pieces
- 3 tbsp (45 g) butter
- 3 tbsp. chopped onion
- 3 tbsp. flour
- 3 cups of milk, heated until steam and small bubbles form
- A pinch of nutmeg
Caramelized shallots
- 10 shallots, peeled and cut into rings, or 40 young onions, peeled
- 6 tbsp (90 g) butter
- 1 tbsp. sugar
Preparation:
- Heat the butter in a small saucepan over medium heat. Add the onion and sauté until soft. Stir in the flour and cook for 2-3 minutes, without allowing the mixture to change color. Stir in the warm milk and cook until thickened. Season with nutmeg, salt, and pepper to taste. Keep the sauce warm until serving.
- Meanwhile, bring a medium saucepan of salted water to a boil. Add the kale and cook until tender, about 10-15 minutes. Drain in a colander and then return to the pan. Add the milk sauce and simmer for about 2 minutes, until the kale is creamy. Season with salt and pepper to taste.
- Place the kale in the milk sauce on a platter and top with the caramelized shallots.
