Preparation:

Sauté 1 pound (450 g) frozen green peas with 4 tablespoons (60 g) butter, 4 tablespoons water, and 1/2 teaspoon salt in a saucepan over medium heat until soft, 12-15 minutes. Uncover and mash with a potato masher until smooth. Stir in 1/2 teaspoon lemon zest and 1/2 teaspoon pepper. Season with salt and dilute with 2-3 tablespoons water.
