Chicken wings in honey sauce with young peas

Ingredients:

  • 2 teaspoons olive oil
  • 1350 g chicken wings, cut into three pieces at the joints, ends removed
  • 2 tsp paprika
  • 1 tsp curry powder
  • 1/2 tsp ground cumin
  • Salt
  • 350 g young peas in pods, cut into long strips
  • 1.5 tbsp soy sauce
  • 1 lime (squeeze the juice from one half of the lime, cut the other half of the lime into wedges)
  • 2 tablespoons of honey

Preparation:

  1. Preheat oven to 220°C. Grease 2 baking sheets with olive oil.
  2. Place the chicken wings in a large bowl, add the paprika, curry powder, ground cumin, and 1/2 teaspoon salt. Mix thoroughly and arrange the wings in an even layer on the baking sheets. Place the baking sheets in the oven and bake the wings for 15 minutes, then flip them, switch the baking sheets, and continue cooking for another 15 minutes.
  3. Meanwhile, bring a saucepan of lightly salted water to a boil. Add the peas and cook until the pods are bright green and tender, about 1 minute. Drain the peas in a colander and rinse under cold water, then transfer to a medium bowl. Add 2 teaspoons olive oil, 1/2 tablespoon soy sauce, and lime juice and toss to combine.
  4. In a large bowl, combine 1 tablespoon of soy sauce and honey. Add the wings and mix thoroughly. Arrange the chicken wings among plates and serve with peas and lime wedges.
