Apple muffins

Ingredients:

  • 1/4 cup chopped pecans
  • 3/4 tbsp. + 2 tbsp. l. brown sugar
  • 0.5 tsp ground cinnamon
  • 1 cup premium flour
  • 1 cup whole grain flour for baking grade II (with a gluten content of 8-10%)
  • 1 teaspoon baking soda
  • 0.5 tsp fine salt
  • 1/4 cup canola oil
  • 2 large eggs
  • 1 tbsp. applesauce (puree)
  • 1 tsp vanilla extract
  • 3/4 cup reduced-fat sour milk
  • 1 Golden Delicious apple, peeled, cored and cut into 0.5cm pieces.

Preparation:

  1. Preheat oven to 200°C. Spray a 12-cup muffin tin with cooking spray.
  2. In a small bowl, combine the nuts, 2 tablespoons of brown sugar, and cinnamon. In a medium bowl, whisk together the flours, baking soda, and salt.

    In a large bowl, whisk together the remaining 3/4 cup sugar and vegetable oil. Add the eggs one at a time, beating well after each addition. Then fold in the applesauce and vanilla.
  3. Stir in the flour in 2 additions, alternating with the sour milk. Mix the dough. Carefully fold in the apple pieces.
  4. Pour the batter into the prepared muffin pan and sprinkle with the nut mixture. Tap the pan a few times on the counter to release any air bubbles. Bake the muffins until a wooden toothpick inserted into the center comes out clean, 20 to 25 minutes.
  5. Cool on a wire rack for 15 minutes. Then, run a knife between the sides of the pan and the muffins to loosen them and remove them. Cool the muffins completely on a wire rack.
