Ingredients:
- 450 g ready-made pizza dough, room temperature (For the pizza dough recipe, see here.)
- Wheat flour, for dusting
- 1 teaspoon corn flour
- 1 teaspoon olive oil
- 1/2 teaspoon sugar
- 3/4 cup mashed potatoes
- 1/2 tbsp. grated cheese Cheddar
- 2 tsp whole milk
- 1 cup of prepared stuffing left over from roasting turkey or chicken
- 1 roast turkey thigh or roast chicken leg
- 1/4 cup cranberry sauce
- 1/4 cup turkey or chicken jus
Preparation:
- Place a pizza stone or baking sheet in the oven and preheat to 250°C.
- Roll the dough out on a lightly floured work surface into a 12-inch (30-cm) circle. Sprinkle another baking sheet with 1/2 teaspoon cornmeal and place the dough on top. Brush the dough with olive oil and sprinkle with sugar and the remaining 1/2 teaspoon cornmeal. Slide the pizza onto the hot baking sheet and bake until golden brown, 5 to 7 minutes.
- Meanwhile, mix the mashed potatoes with 1/4 cup of cheese and milk. Roll the turkey stuffing into 2.5 cm meatballs. Slice the turkey meat, skin on.
- Top the pizza with the potato mixture, then top with the turkey. Drizzle with the cranberry and meat sauce. Place the meatballs on top and sprinkle with the remaining cheese.
- Return pizza into the oven and continue baking for another 8 - 10 minutes.
