Chicken with pepperoni topcook.tomathouse.com
Ingredients:
- 2 boneless, skinless chicken breasts
- 2 tbsp (30 g) butter
- 2 tbsp. l. olive oil
- 3 tbsp. marinara sauce
- 100 gr. pepperoni slices
- 240 g mozzarella, diced
- Chopped fresh parsley for serving
- Salad or prepared pasta for serving
Preparation:
- Using a sharp knife, cut both chicken breasts in half sideways to create 4 thinner chicken cutlets. Season with salt and pepper.
- Heat a heavy-bottomed skillet over medium-high heat and add the butter and olive oil. Cook the chicken until cooked through and crispy, about 2.5 minutes per side. Transfer the chicken to a plate.
- Pour the marinara sauce into the skillet and cook, stirring occasionally, until heated through. Add the chicken cutlets to the sauce and top each with a few slices of pepperoni. Top with diced mozzarella, cover, and cook until the cheese is melted, 2-3 minutes. Sprinkle with parsley.
- Serve immediately with a side of salad or pasta and drizzle with marinara sauce.
