Mashed potatoes with cheese and a crispy baked crust

Ingredients:

  • 1.8 kg potatoes, peeled and cut into 2.5 cm pieces.
  • 1 tbsp (15 g) butter
  • 1 cup whole milk
  • 110 g butter, melted
  • 1.5 tbsp. grated mozzarella
  • 1 tbsp. grated parmesan
  • 2 tablespoons unflavored breadcrumbs

Preparation:

  1. Preheat oven to 200°C. Grease a 33cm x 23cm x 5cm baking dish with 1 tbsp (15g) butter and set aside.
  2. Cook the potatoes in a large pot of boiling salted water until very tender, about 15 minutes. Drain. Return the potatoes to the same pot and mash thoroughly with a masher. Stir in the milk and melted butter. Do the same with the mozzarella and 3/4 cup of Parmesan. Season to taste with salt and pepper.
  3. Transfer the potatoes to the prepared baking dish. Mix in a small bowl. breadcrumbs and 1/4 cup of the remaining Parmesan cheese. Sprinkle the mixture over the mashed potatoes.

    Tip for making ahead

    You can continue cooking to this stage, cover the dish and store it in the freezer for 6 hours.

  4. Bake, uncovered, until the top is golden brown, just before serving (about 20 minutes).
