Ingredients:
Cookie
- 2 cups of flour
- 0.5 cup cocoa powder
- 1.5 tsp of baking soda
- 0.5 tsp baking powder
- 0.5 tsp fine salt
- 1 cup granulated sugar
- 110 g of butter at room temperature
- 1 large egg
- 1 tsp vanilla extract
- 1 cup of milk
Filling
- 2 cups powdered sugar
- 2/3 cup vegetable fat
- 1 tbsp. creamy marshmallows
- 1 - 2 tablespoons of milk
- 1/4 - 0.5 tsp peppermint extract
- About 12 candy canes, crushed
Preparation:
- Cookie: In a large bowl, combine flour, cocoa, baking soda, baking powder, and salt. Sift into another large bowl.
- In a large bowl, beat the sugar and butter with an electric mixer on medium-high speed until light and fluffy, about 5 minutes. Add the egg and beat until smooth. Stir in the vanilla. Alternately add the flour mixture and milk, beginning and ending with the flour. Mix until smooth. Refrigerate the dough for about 1 hour.
- Position oven racks in the upper and lower thirds of the oven and preheat to 200°C (400°F). Line 2 baking sheets with parchment paper and lightly spray with cooking spray.
- Drop the dough by the tablespoonful onto the prepared baking sheets, spacing it 7 cm apart (about 6 per sheet). Refrigerate any remaining dough.
- Bake until the cookies are puffed and the tops are opaque, about 7 minutes. Cool for a few minutes on the baking sheets, then transfer to a wire rack and cool completely, about 1 hour. Let the baking sheets cool, then line them with parchment paper, lightly spray with cooking spray, and bake the remaining dough in batches (line and spray the cooled baking sheets with cooking spray after each batch).
- Filling: In a large bowl, beat the vegetable shortening and powdered sugar with a mixer on medium speed until fluffy. Add the marshmallow fluff, milk, and peppermint extract and beat until light and fluffy, about 5 minutes.
- Spread a heaping spoonful of filling onto half of the cookies. Top with the remaining halves, pressing lightly to spread the filling to the edges. Place crushed candy canes on a plate and roll the sides of the sandwiches in them.
