Waffles with pork ribs

Ingredients:

    Ribs in barbecue sauce

  • 700 gr. waffle dough, see recipe below
  • 1 rack BBQ ribs, recipe below (see Note)
  • 8 tbsp. whipped butter, or to taste
  • 4 teaspoons powdered sugar
  • Your favorite maple syrup for serving
  • Your favorite barbecue sauce for filing

    Waffle batter

  • 3 cups premium flour
  • 1 tbsp + 2 tsp baking powder
  • 1 tbsp. granulated sugar
  • 0.5 tsp coarse salt
  • 2 ¼ cups milk
  • 1/3 cup (5 tbsp + 1 tsp) melted butter
  • 1 tsp vanilla extract
  • 3 eggs

    Spice mix for ribs

  • 0.5 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 tbsp granulated garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon seasoned salt
  • 0.5 tsp cayenne pepper
  • 0.5 tsp dark chili powder
  • 1/4 tsp ground coriander

    Ribs

  • 1 layer of pork ribs weighing approximately 900 g.
  • 1 tbsp of any barbecue sauce

Preparation:

  1. Preheat the waffle iron. Spray with cooking spray. Add the batter, close the waffle iron, and cook until the waffles are golden brown, crispy on the outside, and fluffy inside, 3 to 3.5 minutes.
  2. Cut the ribs into individual bones.
  3. Generously grease the waffles with butter and dust with powdered sugar. Place 3-4 ribs on top of the waffle. For a beautiful presentation, stack them. Serve with syrup and barbecue sauce.
  4. Waffle batter:


    Combine the flour, baking powder, granulated sugar, and salt in a bowl. Make sure the baking powder is thoroughly mixed. Combine the milk, butter, vanilla, and eggs in a separate bowl. Combine the liquid mixture with the flour mixture and knead until a lump-free batter forms. Let the batter rest for 10 minutes before frying the waffles.

    Yield: 4 tbsp.
  5. Spice mix for ribs:


    In a bowl, combine brown sugar, granulated sugar, garlic, oregano, pepper, seasoning salt, cayenne pepper, chili powder, and coriander.
  6. Ribs:


    Preheat oven to 135°C.
  7. Line a baking sheet or shallow baking dish with foil. Add about 1 cup of water. This will prevent the ribs from drying out. Rub 0.5 cups of the spice mixture over the top and bottom of the ribs (set aside the remaining mixture for another use). Place the ribs on the baking sheet and cover the entire dish tightly with foil.
  8. Bake for 2 hours and 15 minutes. Remove the baking sheet from the oven and remove the foil. Carefully drain any excess liquid from the baking sheet. Preheat the oven to 350°F (175°C). Brush the ribs with your favorite barbecue sauce. Return the baking sheet to the oven, uncovered, and bake for another 45 minutes. Let the ribs rest for 5 minutes before slicing, or cover and refrigerate for up to 2 days.

    Note


    To reheat cold ribs in the oven, simply baste them with barbecue sauce, cover with foil, and bake at 350°F (175°C) for 10-15 minutes. To reheat on the grill, add more barbecue sauce and sear them directly on the hot grill until heated through and lightly browned.
