Baked Peaches with Mascarpone topcook.tomathouse.com
Ingredients:
- 4 peach
- 1/4 cup cheese mascarpone or heavy cream
- 1/3 cup elderflower liqueur or sweet dessert wine
- 1 tbsp (15 g) unsalted butter
- 2 tbsp and 2 tsp Demerara cane sugar
Preparation:
- Preheat the oven to broil. Cut the peaches in half and remove the pits, then lightly score the cut sides with a knife in several places.
- In an ovenproof skillet, combine the liqueur and butter and heat over medium heat. Cook, stirring, until the butter has melted and the liqueur begins to simmer gently.
Place the peaches cut-side up and cook for 4 minutes, until the bottoms are soft. Sprinkle each peach half with 1 teaspoon of sugar and place the pan in the oven.
Bake for 3 minutes, until brown spots begin to appear on the peaches. Cool slightly.
- Arrange the peaches on plates and drizzle with the syrup from the pan. Serve with mascarpone cheese.
