Ingredients:
- 2 tsp. canola oil
- 2 sausages, cut into pieces
- 4 fire-roasted tomatoes, halved
- 1.5 cups reserved beans from the Bean and Bacon Pasta recipe
- 1/2 cup chicken broth
- 1/4 cup breadcrumbs
Preparation:
- Add oil to the skillet and heat over medium heat. Add the sausage pieces and cook until golden brown, about 5 minutes. Add the tomatoes, the reserved Beans with bacon and pour in the broth. Cook until the beans are heated through and begin to bubble, 3-5 minutes.
- Meanwhile, melt a tablespoon of butter in a small skillet. Add the breadcrumbs and cook, stirring frequently, until golden brown, about 5 minutes.
- Divide the mixture from the skillet between 2 bowls and sprinkle with breadcrumbs. Serve.
