Ingredients:
- 700 g of minced meat from different types of meat (pork, veal and beef)
- 1 tbsp. simple breadcrumbs
- 0.5 cup grated carrots
- 1 can (110g) chopped green chili peppers, drained
- 1/4 cup chopped fresh cilantro
- 1/4 cup ketchup
- 3 tablespoons chopped pickled jalapeños
- 2 tsp Worcestershire sauce
- 2 large eggs, lightly beaten
- 1 medium green bell pepper, finely chopped
- 1 clove garlic, crushed
- 1 medium onion, grated
- 1/4 cup barbecue sauce
- 2 teaspoons of honey
- 1 teaspoon ground chipotle pepper
- 1 teaspoon apple cider vinegar
Preparation:
- Preheat oven to 175°C and line a baking sheet with parchment paper.
- In a large bowl, combine the ground beef, breadcrumbs, carrots, green chili, cilantro, ketchup, pickled jalapeños, Worcestershire sauce, eggs, bell peppers, garlic, onion, 1.5 teaspoons salt, and 0.5 teaspoon black pepper. Mix with your hands until evenly distributed. Transfer the meat mixture to a loaf pan. Bake for 30 minutes.
- In a small bowl, combine the barbecue sauce, honey, chipotle powder, and vinegar. Remove the meatloaf from the oven and brush the top and sides with the sauce. Return to the oven and bake until the glaze begins to caramelize and a thermometer inserted into the center of the meatloaf registers 160°F (71°C), about 45 minutes more. Let rest for 10 minutes, slice, and serve.
