Refried Beans with Fried Onions (Mexican Tortilla Filling) topcook.tomathouse.com
Ingredients:
- 170 g raw Mexican chorizo sausage (see recipe)
- Half a medium onion, finely chopped
- 860 g refried pinto beans (see recipe)
Preparation:
- Heat a frying pan over medium heat. Add the chorizo and cook for about 6 minutes. Transfer the chorizo to a plate lined with paper towels.
- Add the onion to the skillet with the fat. Cook until translucent, about 4 minutes. Return the chorizo to the skillet. Add the refried beans and cook for about 5 more minutes.
