Chicken Salad with Raisins and Curry topcook.tomathouse.com
Ingredients:
- One baked chicken weighing 1.5-1.8 kg.
- 0.75 cups golden raisins, plus more for garnish
- 0.5 cup chopped almonds, plus more for garnish
- 4 chopped green onions
- 3 chopped celery stalks
- 0.5 cup mayonnaise
- 0.5 cups of yogurt
- 0.25 cups of heavy cream
- 3 tbsp. curry powder
- 2 tablespoons chopped cilantro
- 1 tbsp. sugar
Preparation:
- Cut the cooked chicken into small pieces, removing the skin and bones. Combine the chicken, raisins, almonds, onion, and celery in a large bowl.
In another bowl, combine the mayonnaise, yogurt, sour cream, curry powder, cilantro, sugar, salt, and pepper. Pour the dressing over the salad and gently shake the bowl to combine. Taste and adjust seasonings to taste. Let sit for several hours (or overnight).
- Before serving, garnish with additional raisins and almonds. Serve on lettuce leaves or with bread as a sandwich spread.
You can add to this chicken salad with raisins and curry chutney sauce.
Fried chicken: Preheat oven to 200°C.
Place the chicken on a baking sheet, drizzle with olive oil, and season generously with salt and pepper. Bake until the juices run clear, about 1 hour and 15 minutes. Let cool completely before adding the chicken to the salad.
