Ingredients:
- 450 gr. raw chocolate chip cookie dough
- 1.5 cups semi-sweet chocolate chips
- 1 teaspoon of vegetable oil
- 2 (40 g each) caramel bars, cut into 6 mm pieces.
- 2 medium bananas, peeled and cut into 6 mm slices.
- 500 ml vanilla or banana ice cream, softened
Preparation:
- Position a rack in the middle of the oven. Preheat the oven to 160°C.
- Roll the cookie dough into 12 equal-sized balls and place them on an ungreased baking sheet, pressing them down slightly. Bake for 16-18 minutes, until the edges are lightly browned. Cool for 10 minutes. Transfer the cookies to a cooling rack to cool completely, about 20 minutes.
- In a small bowl, combine the chocolate chips and vegetable oil. Place the bowl over a saucepan of simmering water and stir until the chocolate melts and the mixture is smooth, about 3-5 minutes.
- Spread melted chocolate over the tops of 6 cookies. Place them on a baking sheet lined with parchment or waxed paper. Sprinkle candy bar pieces over the melted chocolate.
- Place the remaining cookies flat-side up on the same baking sheet. Arrange the banana slices on top of the cookies in a single layer. Freeze for 45-60 minutes, until the chocolate has set and the banana slices are frozen solid.
- Using an ice cream scoop, spoon about 1/3 cup soft-serve ice cream over the frozen bananas. Top with a chocolate-covered cookie and gently press to form a sandwich. Repeat with the remaining ice cream and cookies. Freeze for 3-4 hours until the sandwich is firm.
