Zucchini Disco Fries with Sauce and Cheese topcook.tomathouse.com
Ingredients:
- Non-stick cooking spray
- 1/2 cup flour
- 2 large eggs, beaten
- 2.5 tbsp. panko breadcrumbs
- 1/2 tbsp. finely grated parmesan
- 450 g zucchini (2-3 small or medium zucchini), cut into 7.5 x 0.6 cm sticks.
- 1 tbsp. coarsely grated cheddar
- 1 tbsp. coarsely grated mozzarella from partially skimmed milk
- 1.5 cups (340 g) chicken gravy
- 4 pieces fried bacon, crumbled
- 2 green onions, finely chopped
- Special equipment: 2 wire racks, 2 rimmed baking sheets
Preparation:
- Place two racks in the upper and lower thirds of the oven and preheat to 425°F (220°C). Place the racks on two baking sheets and generously spray each with cooking spray.
- Combine flour and 1/2 teaspoon salt in a large resealable bag. In another large bag, combine eggs with 1/2 teaspoon salt. In a third bag, combine breadcrumbs, Parmesan cheese, and 1/2 teaspoon salt.
- Add about half of the zucchini sticks to the floured bag and toss them with your hands until they're completely coated. Remove the zucchini and shake off any excess flour. Then place them in the egg wash bag and repeat until the zucchini is completely coated. Before rolling the zucchini in the breadcrumbs, allow any excess to drip off, then roll them in the breadcrumbs, coating them completely. Transfer to the prepared baking sheet and generously spray the zucchini with cooking spray. Repeat with the remaining zucchini.
- Bake, rotating sheets halfway through, until golden brown and tender, 25 to 30 minutes.
- Reduce the oven temperature to 180°C (350°F) and let the sheets cool for a few minutes. Then remove the rack from one sheet and line it with foil. Transfer the zucchini fries to the sheet and divide them into four equal portions. Sprinkle with an equal amount of each cheese and bake until the cheese is melted, about 10 minutes. Meanwhile, heat the gravy. Once the cheese is melted, use a spatula to transfer each portion of cheese fries to a separate plate. Pour the gravy over them and top with bacon and green onions.
