Ingredients:
- 18 large marshmallow, plus a little more
- 3 sheets graham crackers
- 2 tbsp (30 g) butter
- 110 g dark chocolate 60% cocoa
- Special equipment: 18 lollipop sticks or wooden popsicle sticks
Preparation:
- Preheat the oven broiler. Line a rimmed baking sheet with aluminum foil. Place the marshmallows on the foil, long-side up (do not stand them upright). Place them in the broiler and broil until the marshmallows are golden brown and toasted, 10-15 seconds. Let them cool completely on the sheet. The marshmallows will be firm in the center again, making it easy to insert skewer sticks.
- While the marshmallows are cooling, place the graham crackers in a zip-lock bag and seal. Crush the crackers with a meat mallet, rolling pin, or jar until they form fine crumbs with a few small pieces.
- In a small skillet, heat the butter over medium heat. Add the crumbs and stir until toasted and a few shades darker, 3-4 minutes. Remove from heat, transfer to a plate, and let cool completely.
- When the marshmallows have cooled, thread them onto sticks.
- Finely chop the chocolate and set aside one-quarter. Place the rest in a heatproof bowl and set it over a saucepan filled with simmering water, 5 cm (2 inches) deep, making sure the bottom of the bowl doesn't touch the water. Heat the chocolate until completely melted. Remove from the heat and stir in the remaining chocolate, stirring until completely melted. This technique allows the chocolate to harden without forming gray streaks, known as bloom, on your cake pops.
- Drizzle the marshmallows on the sticks with melted chocolate and sprinkle with crumbs. Insert the sticks into the gaps between the wires, holding them upright until the chocolate hardens. Repeat with the remaining marshmallows, chocolate, and crumbs.
- Fill a few tall glasses with marshmallows and place the prepared popsicles in them, stick side down, and serve.
