Smoked salmon on lettuce leaves

Ingredients:

  • 60 g fillet smoked salmon
  • 3 large romaine lettuce leaves
  • 1 tbsp. low-fat cream cheese
  • 1/4 tsp lemon pepper (no salt)
  • 1/4 cup finely chopped red onion
  • 1 small seedless cucumber, thinly sliced
  • 2 tablespoons sun-dried tomatoes in oil, drain the oil, thinly slice the tomatoes

Preparation:

  1. Place the lettuce leaves on a serving platter and spread 1 teaspoon of cream cheese evenly over each. Sprinkle with lemon pepper seasoning and place the smoked fish on top.
  2. Sprinkle the salmon with onion. Evenly distribute the cucumber slices and sun-dried tomatoes among the servings.

    Wrap and eat!
