Baked chicken breasts in cheese breading topcook.tomathouse.com
Ingredients:
- 2 tablespoons Dijon mustard
- 1/2 tsp chopped thyme leaves
- Coarse salt
- 1/4 tsp cayenne pepper
- 4 chicken breast fillets, skinless (approximately 230 g each)
- 3/4 cup finely grated Parmesan cheese
- 3/4 cup panko breadcrumbs or coarsely ground dried baguette
- Cooking spray
Preparation:
- Preheat oven to 230°C.
- In a medium bowl, combine mustard, thyme, 1/2 teaspoon salt and Cayenne pepperRub the chicken breasts with the resulting mixture.
- In a separate bowl, combine the Parmesan and panko breadcrumbs. Coat the chicken breasts in the breadcrumb mixture.
- Place the chicken breasts on a rack set over a baking sheet, spray with cooking spray, and place the baking sheet in the center of the oven. Bake the chicken breasts until golden brown, 15 to 20 minutes. Remove from the oven and let rest for 5 minutes, then slice the breasts.
