Ingredients:
For French toast:
- 1 challah (sweet loaf), cut into 2.5cm thick slices.
- 4 dates, pitted and chopped
- 6 egg yolks
- 1.5 cups of milk
- 1 tsp vanilla extract
- 1/4 cup freshly squeezed orange juice
- 1 teaspoon finely grated orange zest
- 2 tbsp. l. brown sugar
- 1/2 tsp ground cinnamon
- 1/2 tsp. garam masala
- Butter, for frying
- A handful of semi-sweet chocolate chips or dark chocolate
For the syrup:
- 1/2 tbsp. maple syrup
- 1 tsp bourbon
Preparation:
- Prepare the French toast liaison: In a bowl, combine egg yolks, milk, vanilla, orange juice and zest, brown sugar, cinnamon, garam masala and a pinch of salt, beat with a whisk until smooth.
- Turn on the oven. Place a rack on a baking sheet and place it in the oven. Preheat the oven to 90°C.
- Melt a tablespoon of butter in a frying pan over medium heat. Prick each side of a slice of bread with a fork several times. Place the slice in the egg mixture and press down with a fork to absorb more liquid. Flip and dip the other side.
- Make French toast: Using tongs, lift the slice of bread, let any excess liquid drain, and place it in a preheated pan. Fry on one side for about 3 minutes, and sprinkle with chocolate chips and dates, pressing lightly as you fry. Then carefully flip and fry for another 2-3 minutes. Place the finished French toast in the oven and keep warm while you cook the rest.
- Prepare the syrup: Mix maple syrup with bourbon and heat in the microwave. Serve French toast drizzled with maple syrup.
