Indian-Style Sweet Potato Puree topcook.tomathouse.com
Ingredients:
- 900 g unpeeled sweet potatoes (sweet potato)
- 4 tbsp (60 g) butter
- Salt
- 1 tbsp. curry powder
- 3 tablespoons Greek yogurt
- 3 tbsp. l. mango chutney
- Roasted coconut flakes
Preparation:
- Bake the sweet potatoes in a preheated oven at 200°C (400°F) until soft, about 1 hour. Cut the potatoes in half, then scoop out the pulp. Mash the potatoes with butter until smooth, and add salt to taste.
- Mix mashed potatoes with curry powder, Greek yogurt and mango chutneySprinkle toasted coconut flakes on top of the mashed potatoes.
